  • 1 Medium Onion
  • 3-4 Med/Large Tomatoes
  • 1 Medium Mango Variations: Peaches(3-4), Pineapple (1 c), Kiwi(3-4)
  • 1/4 C Cilantro
  • 3-6 Medium Jalapenos Seeded for milder flavor.
  • 1 Med/Large Lime
  • 1-2 TBSP Minced garlic from the jar This could be a clove or two if you have fresh.
  • 1-2 tsp Cumin
  • 1-2 tsp salt
  • 1 TBSP Honey

Instructions

  • I chop my tomatoes, fruit of choice with a knife. Put them in the bowl.
  • I use chopper for onion and jalapeno, for smaller pieces. If you want more heat leave seeds in peppers, virtually no heat, just flavor - remove them. Trick to removing seeds and vein is with a spoon. I cut my pepper in half, hold it over trash and run the spoon down the inside striping them all out. For this to have the right heat for us I usually remove the inside out of 2 and leave in the other 1 or 2.
  • It's up to you to decide the best way for you to chop cilantro. I am still working on it. I usually have several stems, fold in half or thirds then very finely chop with knife. I ALWAYS do this item last, because it is the messiest.
  • Cut lime in half and juice it into a cup so you can decide how much you want to add. I use the juice of a whole one for this recipe. Tip for lime juicing if you do not have a plastic juicer to twist lime on you can use a spoon for this, also. Just mash the round part in, apply pressure and turn lime.
  • I then add seasonings and honey. All of these can vary based on what you like yours to taste like.
  • Stir, and refrigerate till time to serve!
