Wash well. Remove both ends, slice long ways into slabs 1/4 -1/2 inch thick. Lay out on a cookie sheet or plate. Drizzle with EVOO, apply salt, pepper, garlic salt (optional spices: Cajun, red pepper flakes/crushed, lemon pepper). Flip use brush oil around on back or add more & spices. Grill 2 - 3 minutes on each side. When they come off the grill immediately add the cheese, if you want want it. If you are serving as an appetizer I would cut before applying cheese. Best served while warm.
