Ready to get grilling! Grilling zucchini is a summer standard at the Welch’s. Zucchini along with a big ole pile of protein. Pork chops, boudin, chicken breast, and zucchini are on the coals. If the SCB is gonna fire up the grill, it’s going to be full! We are trying to eat healthier, some days are easier than others. We had the in laws coming, so we just added a little bit more. Though, the grill wasn’t quite large enough for all of the goodies. We would have normally grilled the asparagus, too. But instead, they went into the oven. I will let you in on a little secret. I did totally blow the “healthy” though, because I made desert, but I’m saving that recipe for a later date.

Grilling Zucchini – Super easy, fast and delicious

This is a super easy, fast and delicious side. We have also used it as an appetizer. When we do that we slice each zucchini into about 4 – 5 pieces. They are an inch or so wide, bite size. This is such an easy recipe and I am still so struggling with my recipe maker part of blog….I’m hoping it makes sense. Blog it like I know what I’m doing, LOL.

Grilled Zucchini with Parmesan

Healthy grilled side, main or appetizer.
Prep Time 5 minutes
Total Time 10 minutes

Ingredients
  

  • Drizzle EVOO Extra Virgin Olive Oil
  • 3 - 4 Med/Lrg Zucchini Squash
  • Fresh Parmesan Cheese Optional - Shredded or shaved

Instructions
 

  • Wash well. Remove both ends, slice long ways into slabs 1/4 -1/2 inch thick. Lay out on a cookie sheet or plate. Drizzle with EVOO, apply salt, pepper, garlic salt (optional spices: Cajun, red pepper flakes/crushed, lemon pepper). Flip use brush oil around on back or add more & spices. Grill 2 - 3 minutes on each side. When they come off the grill immediately add the cheese, if you want want it. If you are serving as an appetizer I would cut before applying cheese. Best served while warm.

Where do you cook during the summer?

This recipe has become a favorite for summer, because we can cook the entire meal on the grill outside and not have to heat the house up. I love it because I kinda don’t have to cook anything! Leaves me more time to do pool time and keep the Southern Cabana Boy busy at the blender, too!
